Spinach Balls

Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 5 eggs
  • 1/2 c. melted margarine
  • 3 c. Stove Top stuffing
  • 8 oz. shredded Cheddar cheese
  • 1 c. Parmesan cheese
  • 1 small onion, finely grated
  • 2 tsp. oregano
  • salt and pepper to taste
  • garlic to taste

Directions

    Cook spinach 5 minutes in microwave; drain well.

    Beat eggs. Add remaining ingredients.

    Make one-inch balls.

    Arrange on 2 plates and cook in microwave for 3 minutes each plate.

    Be sure to cover while cooking.

    These may be frozen and cooked, a few at a time, as needed.
