- 6 eggs
- 2 (10 oz.) pkg. frozen chopped spinach, thawed, drained and squeezed dry
- 2 c. herb stuffing mix
- 1 large onion, grated
- 1 c. freshly grated Parmesan cheese
- 3/4 c. (1 1/2 sticks) butter (room temperature)
- 1 tsp. poultry seasoning
- salt and pepper
Directions

1Preheat oven to 350°.

2Beat eggs lightly in large bowl.

3Add remaining ingredients and blend well.

4Roll into walnut size balls.

5Transfer to baking sheet.

6Bake until golden, about 20 minutes.

7Serve hot.

8Spinach balls can be partially baked for 10 minutes, cooled and frozen.

9Reheat thawed balls in 350° oven for 10 to 15 minutes before serving hot.

10Makes about 6 dozen.
