- 2 (10 oz.) pkg. frozen chopped spinach
- 2 c. herb-seasoned stuffing mix
- salt and pepper to taste
- 1 c. grated Parmesan cheese
- 6 eggs, beaten
- 3/4 c. melted margarine
Directions

1Cook spinach using package directions; drain.

2Combine spinach, stuffing mix, Parmesan cheese, eggs, margarine, salt and pepper in bowl; mix well.

3Shape into balls; place on baking sheet.

4Freeze until firm; store in airtight bag in freezer. Place frozen spinach balls on lightly greased baking sheet.

5Bake at 350° for 10 minutes, or until light brown.

6Yield: 60 servings.
