- 2 lb. unsalted butter or margarine
- 1 chopped onion
- 2 cloves garlic, minced
- 1 1/2 lb. spinach, cooked, squeezed dry and chopped or 2 (10 oz.) pkg. frozen spinach, thawed, squeezed dry and chopped
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 2 eggs
- 1/4 c. bread crumbs
- 1/3 c. Parmesan cheese
- 1 c. tomato sauce
Directions

1Melt butter in a skillet.

2Add onion and garlic; saute until golden (10 to 15 minutes).

3Add spinach, salt and pepper.

4Cover and turn heat to its lowest point; steam for 5 minutes.

5Remove; stir in bread crumbs, cheese and eggs.

6Cover and refrigerate at least 2 hours.

7Heat oven to 350°.

8Oil a 9 x 9 x 2-inch dish (baking) and cover bottom with tomato sauce.

9Roll spinach mixture into 2-inch balls; place in tomato sauce.

10Bake, uncovered, 30 minutes and serve.
