Spinach Balls

Ingredients

  • 2 (10 oz.) pkg. frozen, chopped spinach
  • 1 medium onion, chopped
  • 4 eggs, beaten
  • 1/2 c. melted butter or margarine
  • 2 c. Pepperidge Farm herb stuffing
  • 1/2 c. Parmesan cheese
  • 1 tsp. pepper
  • 1 Tbsp. garlic
  • 1 tsp. thyme
  • Italian bread crumbs as needed

Directions

    Thaw spinach in microwave on High for 6 minutes, turning 1/4 turn halfway.

    Squeeze excess water from spinach.

    Mix all ingredients.

    Make into small balls.

    Bake 30 minutes at 300°. These can be easily frozen before baking.

    Place on cookie sheet and freeze.

    Bag and cook later, but thaw before baking.
