- 2 (10 oz.) pkg. frozen, chopped spinach
- 1 medium onion, chopped
- 4 eggs, beaten
- 1/2 c. melted butter or margarine
- 2 c. Pepperidge Farm herb stuffing
- 1/2 c. Parmesan cheese
- 1 tsp. pepper
- 1 Tbsp. garlic
- 1 tsp. thyme
- Italian bread crumbs as needed
Directions

1Thaw spinach in microwave on High for 6 minutes, turning 1/4 turn halfway.

2Squeeze excess water from spinach.

3Mix all ingredients.

4Make into small balls.

5Bake 30 minutes at 300°. These can be easily frozen before baking.

6Place on cookie sheet and freeze.

7Bag and cook later, but thaw before baking.
