  • 2 boxes frozen chopped spinach
  • 4 eggs, beaten
  • 3/4 c. butter
  • 1/2 c. Parmesan cheese
  • 2 c. Pepperidge Farm herb stuffing mix
  • 1/2 tsp. pepper
  • 1 c. onion, finely chopped
  • 1/4 tsp. thyme
  • 1/2 tsp. garlic salt
  • salt to taste

Directions

    Cook spinach according to directions on the box. Combine spinach (drained), onion and stuffing mix; mix well and add seasonings. Melt butter (do not get hot); pour over stuffing mixture. Add eggs and cheese. Mix well; roll into walnut-size balls. Bake in 350° oven for 15 minutes.
