- 2 (10 oz.) pkg. frozen chopped spinach
- 1 large onion, finely chopped
- 3/4 c. melted butter or margarine
- 1/2 tsp. pepper
- 3 c. herb-seasoned stuffing mix
- 6 well-beaten eggs
- 1/2 c. grated Parmesan cheese
- 1 1/2 tsp. garlic salt
Directions

1Drain spinach well and squeeze to remove excess moisture. Combine spinach with remaining ingredients.

2Shape into 3/4-inch balls and place on lightly greased cookie sheet.

3These can be made ahead and frozen and then baked.

4Can be made in blender. Taste like they are made with sausage.

5Bake at 325° for 15 to 20 minutes.

6Yields about 100.
