Spinach Balls

Ingredients

  • 2 pkg. frozen chopped spinach or 2 pkg. fresh spinach, cooked and drained well
  • 1 large onion, chopped
  • 4 eggs, beaten
  • 3/4 c. oleo, melted
  • 1/2 tsp. garlic salt
  • 1/2 tsp. salt and pepper
  • 1/2 c. Parmesan cheese
  • 2 c. Pepperidge Farms herb seasoned stuffing mix

Directions

    Mix all ingredients together and refrigerate 2 hours.

    Roll into small balls.

    If too messy, add more stuffing (a little at a time).

    Grease bottom of pan with oleo.

    Bake in a 325° oven for 30 minutes.

    Turn over and bake another 15 minutes.

    Sprinkle with more Parmesan cheese when taken from oven.
