Spinach Balls

Ingredients

  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • 1 c. cornbread stuffing mix
  • 1/2 c. finely grated Swiss cheese
  • 6 Tbsp. butter
  • 1 small onion, finely chopped
  • 2 eggs
  • 1/4 tsp. nutmeg

Directions

    Saute onion in butter.

    Combine onion and butter mixture with remaining ingredients.

    Blend well.

    Shape into 1-inch balls. Place on cookie sheet and freeze, uncovered, for 1 to 2 hours. When frozen place in a plastic bag and seal with a twistie tie. Keep frozen until ready to thaw for baking.

    Bake on ungreased cookie sheet at 350° for 15 minutes.

    Serve with 1/2 cup mayonnaise and 1 tablespoon of horseradish.
