Spinach Balls

- 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
- 1 c. cornbread stuffing mix
- 1/2 c. finely grated Swiss cheese
- 6 Tbsp. butter
- 1 small onion, finely chopped
- 2 eggs
- 1/4 tsp. nutmeg
Directions

1Saute onion in butter.

2Combine onion and butter mixture with remaining ingredients.

3Blend well.

4Shape into 1-inch balls. Place on cookie sheet and freeze, uncovered, for 1 to 2 hours. When frozen place in a plastic bag and seal with a twistie tie. Keep frozen until ready to thaw for baking.

5Bake on ungreased cookie sheet at 350° for 15 minutes.

6Serve with 1/2 cup mayonnaise and 1 tablespoon of horseradish.
