  • 2 (10 oz.) pkg. frozen spinach, cooked and squeezed dry
  • 2 c. stuffing mix or bread crumbs
  • 1 c. grated sharp Cheddar cheese
  • 6 eggs, well beaten
  • 3/4 c. softened butter
  • 1/2 tsp. garlic powder
  • 1/2 tsp. thyme
  • salt and pepper to taste

Directions

    Combine all ingredients.

    Let stand until moisture is absorbed.

    Roll in 1-inch balls and place on cookie sheet. Freeze.

    While frozen, bake at 400° for 15 to 20 minutes.

    Flip spinach bites once while baking, if desired.
