  • nonstick cooking spray
  • 3 ounces semisweet chocolate
  • 1 cup spinach, pureed
  • 12 cup brown sugar, firmly packed
  • 14 cup unsweetened cocoa
  • 2 tablespoons margarine
  • 2 teaspoons vanilla extract
  • 2 large egg whites
  • 34 cup all-purpose flour
  • 12 teaspoon baking powder
  • 12 teaspoon salt

Directions

    Preheat oven to 350 degrees.

    Coat an 8x8 inch baking pan with cooking spray.

    Melt chocolate in a double boiler or over very low heat.

    In a large bowl combine the melted chocolate, spinach puree, sugar, cocoa powder, margarine, and vanilla.

    Whisk until smooth and creamy for 1 to 2 minutes.

    Whisk in egg whites.

    Stir in the flour, baking powder, and salt with a wooden spoon.

    Pour the batter into the pan and bake 35 to 40 minutes.

    Cool completly in the pan
