Spinach Burgers

  • 500 grams Spinach, tough stalks removed
  • 2 Eggs, beaten
  • 1 pinch freshly grated Nutmeg
  • 3 clove of Garlic, crushed
  • 100 grams fresh white Breadcrumbs
  • 50 grams Parmessan, finely grated (or vegetarian alternative)

Directions

    Blanch the spinach in a saucepan of boiling salted water for about 2 mins.

    Remove, drain and allow to cool slightly.

    Squeeze out as much water as you can and chop all the leaves finely.
  4. 4
    Put the spinach in a bowl and stir in the egg, nutmeg, garlic, breadcrumbs and cheese, as well as some salt and pepper for seasoning.

    Mix well until you reach a nice binding consistency.

    If the mixture is too wet, add some more breadcrumbs.

    Shape into burgers, place on a sheet of greaseproof paper, another sheet on top of the burgers.

    Place in fridge to chill (overnight if possible), or freeze.
