Spinach Casserole

Ingredients

  • 1 medium onion
  • 1 large clove garlic
  • 2 Tbsp. olive oil
  • 1/4 c. chopped green pepper
  • 16 oz. pkg. whole spinach, thawed
  • 6 pieces salami or pepperoni
  • 1 tsp. dry basil
  • 6 eggs, beaten
  • nutmeg
  • 1/4 c. milk
  • 1/2 c. grated Cheddar cheese

Directions

    Slice onion thin, chop garlic very fine.

    Cook in olive oil until clear and very slowly add green pepper.

    Cook a few minutes, cut thawed spinach in pieces.

    Chop salami or pepperoni and add to onion mixture.

    Add basil, 2 shakes nutmeg and spinach.

    Put into casserole.

    Pour eggs, milk and cheese over spinach mixture. Cover and cook until eggs are set at 350° for 1 hour.
