  • 8 oz. large egg noodles
  • 1 (10 oz.) pkg. frozen, chopped spinach
  • 4 Tbsp. (1/2 stick) butter or margarine
  • 1 small yellow onion, chopped
  • 2 eggs
  • 1 c. sour cream
  • 3/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1 c. sharp Cheddar cheese, shredded

Directions

    Preheat oven to 375°. Butter 1-quart casserole dish.

    Cook noodles per package directions.

    Strain and set aside.

    Prepare spinach per package directions.

    Strain and mix with noodles in a large mixing bowl.
