Spinach Casserole

Ingredients

  • 3 pkg. frozen chopped spinach
  • 2 Tbsp. onions, finely chopped
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 3/4 c. milk
  • 3 hard-boiled eggs, grated
  • 1/3 tsp. nutmeg
  • 1 c. grated sharp cheese
  • 1 c. bread crumbs
  • 3 Tbsp. butter
  • salt and red or white pepper

    Cook spinach in salted water.

    Melt 2 tablespoons butter in skillet.

    Add flour and stir.

    Add milk; cook until thick.

    Remove from heat.

    Add spinach, eggs, chopped onions, nutmeg, salt and red or white pepper to taste.

    Pour into a baking dish.

    Top with grated cheese, then crumbs on top of cheese.

    Dot with 3 tablespoons of butter.

    Bake at 350° for 1/2 hour.
