Spinach Casserole

- 3 pkg. chopped spinach
- 1 (8 oz.) pkg. cream cheese
- 2 eggs, separated
- 1 can cream of mushroom soup
- 4 level Tbsp. Parmesan cheese
- 1 can French fried onions
Directions

1Cook and drain spinach.

2Beat egg yolks, mash cream cheese and add both to hot (not boiling) soup.

3Add spinach, beaten egg whites and Parmesan cheese to the above mixture.

4Put in large casserole and top with French fried onions.

5Bake in 350° oven for 35 to 40 minutes.

6No salt is needed in this recipe because of the use of concentrated soup.

7However, if you must use more salt, do it sparingly.

8Serves 8.
