  • 6 eggs, slightly beaten
  • 6 Tbsp. flour
  • 1 1/2 sticks butter, melted
  • 1 tsp. salt
  • 2 to 4 Tbsp. onion, chopped
  • 1 large (8 oz.) cottage cheese (small curd)
  • 2 pkg. frozen spinach, chopped
  • 1/2 lb. Velveeta or Cheddar cheese, cubed small

Directions

    Mix together egg, flour, butter, salt and onion.

    Add cottage cheese and spinach.

    Add Velveeta cubes.

    Spread into a 9 x 13-inch casserole pan.

    Bake at 375° for 45 minutes.

    Casserole may be frozen and thawed before baking.
