  • 1 (10 oz.) pkg. frozen chopped spinach, thawed
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 lb. Monterey Jack cheese, grated (can use less)
  • 1 Tbsp. shortening for greasing dish
  • 1 stick butter or margarine
  • 2 beaten eggs
  • 1 c. milk

Directions

    Sift flour, baking powder and salt.

    Add cheese, butter (softened), eggs, milk and spinach.

    Mix well.

    Bake in lightly greased 9 x 9-inch baking dish at 350°

    for 35 minutes, or until brown on top and mixture is firm.
