  • 1 (24 oz.) or 2 (16 oz.) cartons low-fat large curd cottage cheese
  • 6 eggs or egg substitute of equal volume
  • 6 rounded Tbsp. flour
  • 2 (10 oz.) pkg. frozen, chopped spinach
  • 1 Tbsp. dry onion flakes
  • 2 Tbsp. oregano
  • 8 oz. shredded Cheddar cheese

Directions

    Drain spinach well, squeeze with paper towel.

    Butter deep casserole dish or 2 more shallow casserole dishes.

    Combine all ingredients; stir well.

    Bake at 325°

    to 350° approximately 1 hour or until edges bubble and brown slightly.
