Spinach Cheese Pie

- 1 (2 1/2 or 4 oz.) can mushrooms, drained
- 1 medium onion, chopped
- 2 Tbsp. margarine
- 1 unbaked pie crust for 9-inch deep dish pie pan or quiche dish
- 3/4 lb. Swiss cheese, shredded (1/2 Swiss and 1/2 Mozzarella, not as strong)
- 2 (10 oz.) pkg. Stouffer's spinach souffle, thawed
Directions

1Saute onion and mushrooms in margarine.

2Spread over bottom of unbaked pie crust.

3Top with shredded Swiss cheese (or cheeses). Then spread thawed spinach souffle evenly over cheese.

4Bake in preheated 350° oven for 1 to 1 1/2 hours.

5Let stand 10 minutes before cutting.

6Yields one 9-inch quiche, about 4 main course servings.
