  • 20 ounces spinach or 20 ounces frozen leaf spinach
  • 2 tablespoons butter
  • 34 cup scallion, including the firm greens
  • 12 onion, chopped
  • 6 eggs
  • 15 ounces whole milk ricotta cheese
  • 12 lb feta cheese, crumbled
  • 1 tablespoon dill, chopped
  • 14 cup parsley, chopped

    Preheat oven to 350.
