- 2 packages spinach, frozen whole leaf
- 8 ounces cream cheese
- 1/4 cup parmesan, parmigiano-reggiano cheese, grated grated
- 3 large eggs
- 1 x salt and black pepper to taste
- 2 large eggs
- 1 tablespoon vegetable oil
Directions

1Cook spinach and drain thoroughly.

2(Squeeze out excess water in spinach.)

3Mix drained spinach and 8 ounce cream cheese.

4Beat eggs, salt and pepper and add to spinach mixture.

5Add Parmesan cheese.

6Place mixture in 9 inch pie pan.

7Beat 2 eggs and oil .

8Pour over top of spinach mixture.

9Bake in 375 degree F oven for 30- 35 minutes.

10Slice and serve.
