- 2 (10 oz.) pkg. frozen chopped spinach or 1 1/2 lb. fresh spinach
- 4 Tbsp. butter
- 2 tsp. grated onion
- 3/4 c. Ricotta cheese
- 1 egg, slightly beaten
- 6 Tbsp. flour
- 3/4 c. grated Parmesan cheese
- salt and pepper to taste
- spaghetti sauce
- Bisquick
- Parmesan cheese
Directions

1Cook spinach thoroughly, seasoning with salt and pepper to taste.

2Squeeze dry and chop up finely.

3Melt butter in skillet over moderate heat.

4Add spinach and onion, stirring constantly, for 2 to 3 minutes, until most of the moisture is absorbed.

5Add Ricotta cheese and cook 3 to 4 minutes longer, mixing well. Remove from heat and let cool.
