- 11 ounces frozen spinach
- 1 small onion
- 1 garlic clove
- 12 teaspoon pepper
- 1 teaspoon olive oil
- 8 ounces diced tomatoes (can)
- 1 cup mild salsa
- 1 cup Mexican blend cheese
- 4 flour tortillas (large)
Directions

1place spinach, onion, garlic, pepper, oil in crock pot.

2cook on high for 1 hour.

3stir in tomatoes and salsa.

4cook additional 2 hours with lid off.

5place cooked spinach on tortilla.

6roll tortilla and place in pyrex dish sprayed with Pam.

7cook for 1/2 hour on 350.

8cover with cheese.

9cook additional 1/2 on 350.
