Spinach Frittata *

- 1 lb. spinach, washed and trimmed
- 1/4 c. oil
- 6 eggs
- 1/4 c. matzo meal
- salt and pepper to taste
- nutmeg to taste
- 2 scallions, finely chopped
- 3 Tbsp. chopped parsley or coriander
Directions

1Wilt spinach with 2 tablespoons oil.

2Drain.

3In large bowl, beat eggs lightly.

4Add remaining ingredients, except oil.

5Heat oil in heat bottomed and broiler proof skillet.

6Pour in mixture; cook over gentle heat until bottom sets.

7Place in broiler until lightly browned and set.

8Turn out onto platter.

9Cut like a cake. Eat hot or cold.

10Yields 4 to 6 good slices.
