- 3 Tbsp. oil
- 1/2 c. thinly sliced onion
- 10 eggs
- 1 c. chopped fresh spinach
- 1/2 c. parmesan cheese
- 1 Tbsp. parsley
- 1 clove fresh garlic
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Preheat oven to 350°.

2Heat oil in large skillet with heat resistant handle.

3Add onion; saute for 5 minutes.

4In bowl, combine remaining ingredients.

5Beat well with fork.

6Pour into skillet with onion.

7Cook over low heat for about 3 to 5 minutes or until eggs are set around outside.

8Bake uncovered 10 minutes or until top is set.

9With spatula, loosen from bottom and around edges.

10Slide onto serving platter.

11Cut into wedges.
-
12Makes 4 to 6 servings.
