- 2 tablespoons unsalted butter
- 2 cups yellow onions, chopped
- 18 cup flour
- 14 teaspoon nutmeg, grated
- 12 cup heavy cream
- 1 cup milk
- 4 bunches fresh spinach
- 12 cup parmesan cheese, freshly grated
- 12 tablespoon kosher salt
- fresh ground black pepper
- 12 cup gruyere cheese, grated
Directions

1Preheat the oven to 425 degrees F. Melt the butter in a heavy-bottomed saute pan on medium heat.

2Add the onions and cook for about 5 to 6 minutes or until translucent.

3Add the spinach to the sauce, cook for about a minute or until the spinach is just wilted.

4Add the flour and nutmeg, stir and cook for 2 more minutes.

5Add the cream and milk and cook until thickened.

6Add 1/2 of the Parmesan cheese and mix well.

7Season with salt and pepper and transfer to a baking dish and sprinkle the remaining Parmesan and the Gruyere.

8Bake for 20 minutes until hot and bubbly.

9Serve immediately.
