  • 4T butter
  • 4 c chopped onion (2 large)
  • 1/4 cup flour 1/4 t nutmeg
  • I c heavy cream
  • 2 c milk
  • 5 10-oz packages frozen spinach
  • 1 cup parmesan
  • 1T kosher salt 1/2 t pepper
  • 1/2 c gruyere

Directions

    Preheat oven to 450°. Melt butter in heavy skillet over medium heat. Add onion and saute until transparent. Add flour, nutmeg, and cook for 2 more minutes. Now add cream and milk and cook until thickened. Squeeze water out of spinach and add to sauce with 1/2 cup parmesan. Season with salt and pepper. Transfer spinach to baking dish and sprinkle with remaining parmesan and gruyere. Bake 20 minutes or until bubbly. Serve immediately.
