  • 1 c. cottage cheese
  • 3/4 c. commercial sour cream
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1 1/2 c. herb seasoned stuffing mix
  • 1 egg, beaten
  • 1/4 c. minced onion
  • 1/2 tsp. dry mustard
  • 12 (1/8-inch thick) slices ham (about 1 1/2 lb.)
  • Cheese Sauce
  • paprika
  • green onion tops, sliced
  • parsley sprigs

Directions

    Combine cottage cheese and sour cream in container of an electric blender.

    Process until smooth.

    Combine sour cream mixture and next 5 ingredients; mix well.

    Spoon 1/4 cup mixture on each slice of ham.

    Roll up and place seam side down in a lightly greased 13 x 9 x 2-inch baking dish.

    Top with Cheese Sauce. Sprinkle with paprika.

    Garnish with onion tops and parsley. Yields 12 servings.
