Spinach-Hash Pie

- 2 tsp. minced onion
- 1/4 c. milk
- 1 (15 oz.) corned beef hash (in can)
- 1 (16 oz.) can spinach, well drained or fresh
- 4 eggs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. ground nutmeg
- 1 Tbsp. grated Parmesan cheese
Directions

1Heat oven to 350°.

2Grease 9-inch pie plate with shortening or spray.

3Mix onion and milk in small bowl.

4Let stand 3 minutes. Spoon corned beef hash into prepared pie plate.

5Spread evenly over bottom and sides to form a shell. Spoon spinach over hash. Beat together eggs, milk mixture, salt, pepper and nutmeg in a bowl.

6Pour over spinach and mix together lightly. Bake, uncovered, 40 to 45 minutes or until custard is set. Sprinkle with Parmesan cheese before serving.
