- 3 (10 oz.) pkg. frozen, chopped spinach, thawed
- 2 c. dry cottage cheese
- 3 c. flaked coconut
- 1/3 c. flour
- 4 eggs
- 1 1/2 c. sour cream
- 1/3 c. soy sauce
Directions

1Place spinach in sieve and press out as much liquid as possible.

2Combine spinach, cottage cheese and coconut.

3Combine eggs, sour cream, flour and soy sauce in blender or food processor.

4Blend until smooth; fold into spinach mixture.

5Spoon into ungreased 2 1/2-quart casserole dish.

6Refrigerate, covered, up to 2 days.

7Bake, uncovered, at 350° for 40 to 45 minutes. Allow to stand 10 minutes before serving.

8Yields 12 servings.
