  • 3 (10 oz.) pkg. frozen, chopped spinach, thawed
  • 2 c. dry cottage cheese
  • 3 c. flaked coconut
  • 1/3 c. flour
  • 4 eggs
  • 1 1/2 c. sour cream
  • 1/3 c. soy sauce

Directions

    Place spinach in sieve and press out as much liquid as possible.

    Combine spinach, cottage cheese and coconut.

    Combine eggs, sour cream, flour and soy sauce in blender or food processor.

    Blend until smooth; fold into spinach mixture.

    Spoon into ungreased 2 1/2-quart casserole dish.

    Refrigerate, covered, up to 2 days.

    Bake, uncovered, at 350° for 40 to 45 minutes. Allow to stand 10 minutes before serving.
