Spinach Hummus

- 2 cup chickpeas cooked
- 2 1/2 cup fresh spinach packed
- 1/4 cup olive oil or more to taste and consistency
- 3 tbsp tahini
- 1 tbsp lemon juice
- 2 clove garlic
Directions

1Place all ingredients, but oil, in blender and blend to desired consistency.

2Spice additions: 1 pinch salt, cumin, oregano, cayenne pepper and black pepper.

3Slowly pour in olive oil until desired consistency.

4Sprinkle with cayenne pepper for garnish and serve with crunchy bread, pita chips, pretzels, or fresh veggies.

5Notes: Preparing chickpeas in advance.

6Soak dried chick peas in water over night covered, in refrigerator.

7Water slightly more than two times dried amount.

8Drain.

9Boil until tender (about 20 to 30 minutes.)

11Allow to cool.
