  • 1 small pkg. lasagna noodles
  • 1 jar spaghetti sauce
  • 10 oz. pkg. frozen chopped spinach, thawed and drained
  • 1 egg
  • 8 oz. shredded mozzarella cheese, reserve a little for top
  • 1/2 carton ricotta or cottage cheese
  • 1/2 c. sour cream
  • 1/4 c. Parmesan cheese
  • 1/2 tsp. salt
  • pinch ground pepper

Directions

    Preheat oven to 350°. Cook lasagna noodles according to package directions. Prepare filling by mixing spinach, egg, cheeses, salt and pepper. Layer noodles, filling and sauce twice in a baking dish. Sprinkle reserved mozzarella cheese on top. Bake for 30 minutes.
