Spinach Lasagna

Ingredients

  • 1 (1 1/2 oz.) pkg. spaghetti sauce mix
  • 1 (6 oz.) can tomato paste
  • 1 (15 oz.) can tomato sauce
  • 2 1/2 c. water
  • 2 eggs, beaten
  • 1 (16 oz.) Ricotta or cottage cheese
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1/2 c. grated Parmesan cheese
  • 1/2 (16 oz.) pkg. lasagna noodles
  • 2 (6 oz.) pkg. sliced Mozzarella cheese

Directions

    Combine spaghetti sauce mix, tomato paste, tomato sauce and water in saucepan.

    Bring to a boil.

    Remove from heat and set aside.

    Combine eggs, Ricotta or cottage cheese, spinach and 1/4 cup Parmesan cheese.

    Mix well and set aside. Cook noodles and drain.

    Layer noodles, sauce, spinach mixture and Mozzarella cheese.

    Top with remaining Parmesan cheese.

    Bake at 350° for 1 hour.
