- 6 whole wheat lasagna noodles
- 15 oz. light Ricotta cheese
- 1/4 c. egg substitute
- 10 oz. pkg. chopped spinach (use 1/2 box), thawed and pressed dry
- 8 oz. part skim Mozzarella
- 30 oz. meatless spaghetti sauce
Directions

1Cook noodles in boiling water until tender.

2Drain.

3While noodles cook, mix Ricotta, egg substitute and drained spinach together.

4Place 1/2 cup sauce in bottom of 8 x 10 x 2-inch baking dish and spread to the edges.

5Place 2 lasagna noodles on sauce and top with 1/2 of spinach cheese mixture.

6Layer 2 slices of Mozzarella over spinach.

7Repeat layers:

8noodles, spinach mixture and Mozzarella.

9Finish with a layer of noodles.

10Pour remaining sauce over layers.

11Cover with foil.

12Bake in 350° oven for 60 to 90 minutes.
