Spinach Lasagna

  • 1 lb. Ricotta or cottage cheese
  • 1 1/2 c. shredded Mozzarella cheese
  • 1 egg
  • 1 pkg. cut spinach, thawed and drained
  • 1 tsp. salt (optional)
  • 3/4 tsp. oregano
  • 1/8 tsp. pepper
  • 1 large jar meatless spaghetti sauce
  • 1 large pkg. uncooked lasagna noodles
  • 1 c. hot water

Directions

    Use 9 x 13-inch pan, preheat oven to 350°.

    In a large bowl, mix Ricotta, 1 cup Mozzarella cheese, egg, spinach, salt, pepper and oregano.

    In greased baking dish, put about 1/2 cup sauce, spread noodles to cover.

    Add cheese mix and some sauce.

    Repeat with noodles, cheese mix and sauce.

    (You can make as high as you wish.)

    Top with the remaining 1/2 cup of Mozzarella cheese.

    Pour hot water around edge, cover with foil and bake for 1 hour and 15 minutes.

    Let stand for 15 minutes before cutting so it gets a bit firm.
