Spinach Lasagna

  • 9 lasagna noodles
  • 1 large onion, chopped
  • 8 oz. pkg. mushrooms, sliced
  • 1 garlic clove, minced
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed
  • 1 tsp. dried oregano leaves
  • 1 tsp. dried basil leaves
  • 1/4 tsp. pepper
  • 16 oz. 1% cottage cheese
  • 2 egg whites
  • 1/3 c. flour
  • 8 oz. reduced-fat Mozzarella cheese, shredded
  • 3 (8 oz.) cans tomato sauce
  • 1/4 c. grated Parmesan cheese

    Prepare noodles.

    Cook onions, mushrooms and garlic 5 minutes in nonstick skillet over medium heat.

    Remove from heat and stir in spinach, oregano, basil and pepper.

    Set aside.

    In food processor, blend cottage cheese, egg whites, flour and 1 cup Mozzarella cheese until smooth.
