Spinach Lasagne

  • 1 (10 oz.) pkg. frozen spinach or 1 lb. fresh
  • 1 egg
  • 1 tsp. salt
  • 8 to 9 oz. lasagne noodles, uncooked
  • 1 1/4 c. water
  • 1 lb. Ricotta cheese
  • 1 1/2 c. Mozzarella cheese, shredded
  • 3/4 tsp. oregano
  • 1/8 tsp. pepper
  • 1 (32 oz.) jar Ragu sauce

Directions

    Thaw and chop frozen spinach or cook and chop fresh spinach. Drain well and set aside.

    Mix well Ricotta, egg, oregano, salt, pepper and only 1 cup Mozzarella.

    Stir spinach into the cheese mixture.

    Grease a 9 x 13-inch pan and put in 1/3 of the sauce. Next, layer 3 uncooked noodles, then 1/2 of the cheese mixture. Repeat one time.

    Put last of noodles on top and cover with the last 1/3 of sauce.

    Top with the remaining 1/2 cup Mozzarella. Pour 1 1/4 cups water all around the edges.

    Cover tightly with foil.

    Bake at 350° for 1 1/4 hours.

    Let stand 15 minutes before cutting and serving.
