Ingredients

  • 2 c. chopped spinach, washed and drained
  • 1 c. toasted soft bread crumbs
  • 3 eggs, beaten
  • 1 medium green pepper, chopped
  • 1/4 c. melted butter
  • 1 medium onion, grated
  • 1 clove garlic, crushed
  • salt and pepper to taste
  • hard-cooked egg yolk, sieved

Directions

    In a mixing bowl, combine all ingredients, except egg yolk, and blend thoroughly.

    Turn into a buttered 5 x 8-inch loaf pan. Set in a larger pan with 1-inch warm water and bake for about 1 hour at 325°.

    When done, let cool for a few minutes and then turn out on a heated platter.

    Sprinkle with hard-cooked egg. Slice and serve.
