Spinach Mock Quiche

  • 1 crust pie dough
  • 2 pkg. frozen spinach
  • 1 egg
  • 2/3 c. milk
  • 1 c. Swiss cheese, shredded
  • 1/4 tsp. nutmeg
  • 2 Tbsp. pinenuts
  • salt and pepper to taste

Directions

    Preheat oven to 400°.

    Roll out pie dough to fit into a 9-inch deep dish pie pan.

    Defrost spinach, drain and squeeze dry.

    In a bowl, combine spinach, cheese, nuts and seasonings.

    In a small bowl, beat the egg with the milk.

    Add to spinach mixture.

    Pour mixture into unbaked pie shell.

    Keep filling even around crust. Bake for 30 minutes or until knife inserted in center comes out clean.
