Spinach Noodles

  • 1/4 c. spinach puree
  • 1/4 tsp. salt
  • 1 egg
  • 2 c. flour

Directions

    Cook, drain and puree spinach in the blender.

    Combine spinach puree, egg and salt.

    Stir in gradually the flour, then knead until smooth.

    Place dough in covered container for 30 minutes. Roll out very thin on floured surface.

    Let this dry some, not too dry to roll up.

    Roll up and cut into very thin strips.

    Toss apart and let dry throughly.

    Store in airtight container or let dry at least 2 hours and cook, uncovered, 10 minutes in boiling water.
