- 2 (10 oz.) pkg. frozen chopped spinach
- 1 Tbsp. minced dried onion
- 2 Tbsp. water
- 3 Tbsp. butter or margarine
- 1 c. herb-seasoned stuffing mix
- 1 c. grated Parmesan cheese
- 2 eggs, beaten
Directions

1Place frozen spinach and dried onion in a 1 1/2-quart casserole with water.

2Cook, covered, in a microwave on High for 9 to 11 minutes, stirring once.

3Let stand 3 minutes.

4Drain well. In the same casserole, stir together hot spinach mixture and butter or margarine until butter melts.

5Add stuffing mix and Parmesan cheese.

6Stir in eggs.

7To make shaping the spinach mixture easy, drop small mounds onto a baking sheet lined with wax paper.

8Freeze about 10 minutes to firm up the mixture; then shape the mounds into 1-inch balls.
