- 1/4 tsp. salt
- 1/4 lb. spinach, chopped and rinsed
- 4 medium fresh mushrooms
- 1/4 c. chopped onion
- 2 tsp. oil or butter
- Parmesan cheese
Directions

1Add milk and salt to eggs.

2Preheat a nonstick skillet.

3Add 1 teaspoon oil or butter and spread with pastry brush.

4Add onion. Saute until golden.

5Add spinach and mushrooms.

6Stir frequently until tender.

7Remove from pan.

10When almost set, spoon vegetables onto one-half.

11Cook sightly longer.

13Fold uncovered half over.
