- 1 pie shell 9 inch unbaked
- 10 ounces frozen chopped spinach
- spanish onion 1 lg., chopped, 2 c.
- 1 pound bacon
- 3/4 cup swiss cheese grated
- 3 eggs beaten
- 1 cup milk
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 dash nutmeg
Directions

1Bake pie shell until partially done at 375 degrees, about 7 minutes.

2Peel and chop onion.

3Cook bacon in skillet until crisp.

4Drain on paper towel.

6Add onions to bacon drippings in skillet and saute until soft but not brown.

7Cook spinach according to package directions, omitting salt.

8Drain thoroughly, squeezing out excess moisture.

9Layer onion, bacon, spinach, cheese in partially baked pie shell.

10Combine eggs, milk and seasonings - pour over quiche.
