  • 14 cup pickled sweet red peppers, sliced
  • 1 tablespoon olive oil
  • 4 cups fresh spinach, stemmed
  • 4 eggs
  • 1 cup heavy cream
  • 4 ounces feta cheese, crumbled

    Preheat oven to 350 degrees.

    Saute peppers in olive oil until slightly softened.
