- 10 oz. frozen chopped spinach
- 3 oz. cream cheese, softened
- 1 c. shredded sharp Cheddar cheese
- 5 eggs, slightly beaten
- 1/2 tsp. salt
- 1/4 c. chopped green onion
- 2 Tbsp. chopped parsley
- unbaked 9-inch pastry shell
- thinly sliced tomato
- 1/4 c. grated Parmesan cheese
Directions

1Cook spinach according to package directions.

2Drain and squeeze to remove all water.

3Combine all other ingredients, except tomato and Parmesan cheese.

4Stir lightly with fork.

5Stir in spinach.

6Pour into pastry shell.

7Arrange tomato on top and sprinkle with Parmesan cheese.

8Bake at 450° for 35 minutes.
