Name: Spinach Pie I
Ingredients: 1 pkg. frozen chopped spinach (well drained); 1 c. Ricotta cheese; 8 Tbsp. grated Romano or Parmesan cheese; 2 eggs, beaten (I use Egg Beaters); 1/4 c. milk; 1 Tbsp. flour; 3 shakes nutmeg; Tabasco to taste

1 pkg. frozen chopped spinach (well drained)
1 c. Ricotta cheese
8 Tbsp. grated Romano or Parmesan cheese
2 eggs, beaten (I use Egg Beaters)
1/4 c. milk
1 Tbsp. flour
3 shakes nutmeg
Tabasco to taste

Directions

Mix together and pour into 9-inch uncooked Pet-Ritz pie shell. Generously sprinkle with Parmesan cheese.

Dot with butter and lightly sprinkle with paprika.

Bake at 350° about 40 minutes. May cover edges of pie crust with foil.
