Spinach Pie I

Ingredients

  • 1 pkg. frozen chopped spinach (well drained)
  • 1 c. Ricotta cheese
  • 8 Tbsp. grated Romano or Parmesan cheese
  • 2 eggs, beaten (I use Egg Beaters)
  • 1/4 c. milk
  • 1 Tbsp. flour
  • 3 shakes nutmeg
  • Tabasco to taste

Directions

    Mix together and pour into 9-inch uncooked Pet-Ritz pie shell. Generously sprinkle with Parmesan cheese.

    Dot with butter and lightly sprinkle with paprika.

    Bake at 350° about 40 minutes. May cover edges of pie crust with foil.

    Also good cold.
