Spinach Quesadillas

Ingredients
- 1/4 c. chopped cilantro
- 1 c. chopped onion
- 2 Tbsp. chopped garlic
- 1 Tbsp. olive oil
- salt and pepper to taste
- 10 oz. pkg. frozen spinach, thawed, or 2 bunches fresh, cleaned and blanched
- 1 c. shredded Monterey Jack cheese
- 8 to 10 flour tortillas
- butter for grilling tortillas
Directions

1Saute cilantro, onion and garlic in oil.

2Season with salt and pepper.

3Add spinach and cheese; heat until cheese is melted. Spoon 2 tablespoons of mixture onto flat of tortilla.

4Distribute evenly onto half of tortilla and fold in half.

5Repeat with remaining tortillas.

6Heat butter in medium skillet over medium heat.

7Grill filled tortillas on each side until brown.

8Serve immediately.
