  • 1 1/2 c. frozen chopped spinach
  • 4 Tbsp. butter
  • 1/2 lb. Ricotta
  • 3 eggs, lightly beaten
  • 1/2 c. Parmesan cheese
  • 1/2 c. heavy cream
  • 1 pie shell (lightly baked)

Directions

    Preheat oven to 375°.

    Cook spinach in butter.

    Drain well and add remaining ingredients.

    Mix well.

    Pour into lightly baked pie shell.

    Bake at 375° for 30 to 45 minutes, until top is lightly brown.
