Ingredients
- 1 (10 oz.) pkg. frozen chopped spinach
- 2 Tbsp. chopped onion
- 3 Tbsp. melted butter
- salt and pepper to taste
- 1/4 tsp. ground nutmeg
- 3 eggs, beaten
- 1 1/2 c. half and half
- 1 c. shredded Swiss cheese
- 1 pie crust or 12 tart shells
- bacon bits
Directions

1Cook spinach according to package directions.

2Drain well and set aside.

3Saute onions in butter until soft.

4Add spinach.

5Cook and stir over medium heat, about 3 minutes.

6Blend in salt, pepper and nutmeg.

7Set aside.

8Combine eggs, half and half and bacon bits and blend well.

9Stir in spinach and cheese.

10Spoon into pie crust or tart shells.

11Bake at 375° for 35 to 40 minutes (20 minutes for tarts).
