Spinach Quiche

Ingredients

  • 1 (10 oz.) pkg. frozen chopped spinach
  • 2 Tbsp. chopped onion
  • 3 Tbsp. melted butter
  • salt and pepper to taste
  • 1/4 tsp. ground nutmeg
  • 3 eggs, beaten
  • 1 1/2 c. half and half
  • 1 c. shredded Swiss cheese
  • 1 pie crust or 12 tart shells
  • bacon bits

Directions

    Cook spinach according to package directions.

    Drain well and set aside.

    Saute onions in butter until soft.

    Add spinach.

    Cook and stir over medium heat, about 3 minutes.

    Blend in salt, pepper and nutmeg.

    Set aside.

    Combine eggs, half and half and bacon bits and blend well.

    Stir in spinach and cheese.

    Spoon into pie crust or tart shells.

    Bake at 375° for 35 to 40 minutes (20 minutes for tarts).
